1 sheet puff pastry, defrosted

1/2 cup cranberry sauce

4 ounces Brie, chilled in the freezer for 10 minutes

1 egg, beaten

Preheat oven to 400°F

On a floured surface, roll puff pastry to a rough 9-10 inch square.

  1. For muffin cups… cut the puff pastry evenly into 12 pieces. Brush pastry pieces with egg wash, then lay each piece into the cups of a well oiled muffin tin. Prick the bottom of each pastry with a fork three times. Add a teaspoon of cranberry sauce and a cube of Brie. Bake 16-18 minutes.

  2. For pinwheels… spread cranberry sauce evenly across the puff pastry, keeping 1/2 inch edge on one side. Cut Brie into small dice, and scatter evenly over the cranberry sauce and pastry. Brush egg wash along the 1/2 inch edge. Starting on the opposite side, roll tightly toward the 1/2 inch edge, pinching the edge to seal. Chill the roll for 10 minutes, then slice into 1/2 inch thick pinwheels using a serrated knife. Lay pinwheels on a parchment lined baking sheet. Bake 16-18 minutes.

Optionally garnish pinwheels or muffin bites with sprigs of rosemary, sweetened dried cranberries, a drizzle of honey, or a brush of melted butter. Enjoy!
