Asparagus Salad and Hummus on Toast

Ingredients:


Lemon vinaigrette (recipe follows)

Shaved asparagus salad  (recipe follows)

Rustic bread

Olive oil

Store-bought hummus


For the Lemon vinaigrette…

2 tablespoons Fresh lemon juice

1 Garlic clove, minced

1 teaspoon Dijon mustard

1/4 teaspoon Salt

1/8 teaspoon Pepper

4 tablespoons Olive oil


Add ingredients to a medium size mixing bowl, whisk to combine and set dressing aside.


For the Asparagus salad…

4 ounces Fresh Asparagus

1–2 Radishes, trimmed

1 Scallion


To prepare the asparagus… if stalks are young and pencil thin, simply cut into 1 to 2 inch lengths. If stalks are thicker, use a peeler to shave into thin strips. Slice the remaining vegetables thinly with a sharp knife or mandolin. Add vegetables to the lemon vinaigrette, and toss to combine.


To assemble the toasts…


Using a pastry brush, spread olive oil on each slice of rustic bread. Grill or oven toast slices of the rustic bread until lightly charred and golden.


Spread 1 to 2 tablespoons of hummus on each toast, then top with the dressed asparagus salad. Enjoy!
