Tater Tot®️ Breakfast Bake

Fun fact: "Tater Tots" is a registered trademark and brand name owned by Ore-Ida®️ (a subsidiary of Kraft Heinz). Other brands use terms like "potato puffs" or "tater bites".


Ingredients:


Olive oil

Tater Tots®️, aka potato puffs or tater bites

1 cup Frozen broccoli, defrosted

3 slices Canadian Bacon, diced

3-4 ounces Sharp Cheddar cheese, grated

4–6 Eggs

1/4 teaspoonSalt

1/4 teaspoon Pepper


Method:


Preheat oven to 425°F.


Use olive oil to grease an 8 inch cast-iron skillet or 9 inch glass pie plate. Line the bottom of the vessel with tater tots, spacing tots as tightly together as possible. Continue by lining tater tots around the edges of the dish. Bake for 15 to 18 minutes.


Meanwhile, in a wide nonstick skillet placed over over medium heat, sauté the diced Canadian bacon and broccoli with 1 tablespoon of olive oil. Cook until some light browning occurs.


Crack eggs into a small mixing bowl along with 1 tablespoon of water, salt and pepper. Whisk to combine. Off heat, add the eggs to the skillet containing the broccoli and Canadian bacon. Stir until some light curd began to form, but eggs should still be runny.


Remove the tater tot crust from the oven. Using the back of a coffee cup or sturdy glass, carefully press tots to form a more even bottom layer. Gently press along the sides as well.


Scatter half a cup of cheddar cheese across the tater tot crust, followed by the egg mixture, then the remaining cheese. Return to oven and bake another 15 minutes or until the eggs are set and the cheese is spotty brown.


Allow the tater tot breakfast baked to rest for 5 to 10 minutes before slicing. Enjoy!
