Salsa Chicken (Quesadillas)

Easy and light, salsa chicken is a beginner's no-brainer recipe. I love a local Pittsburgh brand of salsa, Two Ugly Mugs, for its balance and sweetness... but use your favorite brand. I'm keeping it light with chicken breast, but you could do chicken thighs as well. Enjoy!


Recipe Description:


For the chicken...

1 tablespoon Olive oil

2 Boneless skinless chicken breasts

16 ounces Salsa


For quesadillas...

Shredded cheddar cheese

Flour tortillas

Sour cream

Lime wedges


Instructions:


Preheat oven to 375°F

Brush 1 tablespoon of olive oil in an oven safe baking dish. Placed chicken breasts in dish and cover completely with salsa. Bake 25 to 30 minutes or until the internal temperature reads 165°F.


Once the baked chicken is cool enough to handle, shred with two forks. Build quesadillas, adding cheese, chicken, and more cheese to each flour tortilla. Fold and bake in the same 375°F oven, until tortillas are golden and cheese has melted . Serve with lime wedges, sour cream, and more salsa. Enjoy!
