Ingredients:
1 Small onion, peeled and thinly sliced
1-2 tablespoons Butter or Olive oil
16 ounces Ground turkey
2 teaspoons Lemon pepper seasoning, salt free
1/2 teaspoon Salt
1/4 teaspoon Pepper
20 ounces (two cans) Cream of mushroom soup (may substitute with a homemade version, recipe and instructions below)
2 cups Frozen mixed vegetables
28 ounces (one bag) Tater Tots®️
Method:
Preheat oven to 375°F and grease a 9x13 inch baking dish.
In a wide skillet set over medium heat, add butter or olive oil and the sliced onion. Cook until onion softens, then add the ground turkey. Seasoned with lemon pepper, salt, and pepper. Continue cooking until turkey is thoroughly brown.
Transfer turkey and onion mixture to the 9x13 inch baking dish. Using the back of a spoon or spatula, make an even layer.
Scatter 2 cups of frozen mixed vegetables over the ground turkey, followed by two cans of cream of mushroom soup. Use the back of a spoon to smooth soup to an even layer.
Place tater tots evenly over a soup layer. Transfer baking dish to the preheated oven and cook for 45 to 55 minutes. Allow casserole to stand for five minutes before serving. Enjoy!
Bonus recipe: Homemade Condensed Cream of Mushroom Soup
Ingredients:
8 ounces Cremini mushrooms, diced
3 tablespoon Butter, divided
1 Garlic clove, minced
1/4 teaspoon Garlic powder
1/4 teaspoon Onion powder
1/8 teaspoon Salt
1/8 teaspoon Pepper
3 tablespoons Low sodium soy sauce
3 tablespoons Flour
2 1/2 cups Whole milk, warmed
Method:
In a large wide skillet, set over medium heat, add 1 tablespoon of butter and the diced mushrooms. Cook for one to two minutes, then add minced garlic, garlic powder, onion powder, salt, and pepper. Cook 3 to 5 minutes longer.
Add the remaining 2 tablespoons of butter to the skillet along with 3 tablespoons of flour. Cook 1-2 minutes to remove the raw flour taste.
Add milk and soy sauce to the skillet, and increase heat until mixture is simmering. Cook until soup has thicken and reduced slightly.
