Apple Cake

Ingredients:
1 cup All purpose flour
2 teaspoons Baking powder
3 teaspoons Ground cinnamon, divided
1/4 teaspoon Salt
2 Eggs, room temperature
1 cup Sugar
1 teaspoon Vanilla
1/2 cup Neutral oil
3 medium Apples, cored and roughly peeled, then sliced thinly
1/2 cup Chopped nuts (optional)
1 tablespoon Turbinado sugar
Method:
Preheat oven to 350°F. Prepare a square 9X9in baking pan by greasing all sides, line the bottom with parchment paper and grease the paper.
In a medium bowl, sift together the flour, cinnamon, baking powder, and salt.
In a large mixing bowl, combine the eggs, sugar, and vanilla. Beat mixture with a wire whisk until pale yellow and frothy, about 5 to 7 minutes. Whisk in the oil until fully incorporated.
Add the dry ingredients to the wet, and stir to combined until no streaks of flour remain. Fold in the apples and nuts. Transfer batter to a prepared square baking pan, smoothing to an even layer. Scatter the Turbinado sugar and a teaspoon of cinnamon on top of the cake and bake for about 40 minutes.
Once baked, allow the cake to cool in the pan completely. Remove from pan and slice with a serrated knife to serve. Enjoy with whipped cream or ice cream.
